Quick ‘n Easy Sprout Salad Recipe

I love my broccoli sprouts by the handful, but their strong, radish-like flavor sometimes needs to mixed with other greens to make them more manageable.

I don’t always have fresh lettuce available, so I tried a new recipe today that I thought I’d share. It’s awesome and simple.

Broccoli Sprout Salad Ingredients

Here are the 5 ingredients you’ll need:

  • 1 large avocado
  • 1 medium-large cucumber
  • A Large handful of sprouts (I used an entire harvest grown from 1 tbsp of seeds)
  • Splash of lemon juice
  • Few shakes of Himalayan salt

I diced up the avocado and cucumber (peeled) into small chunks and put them in the bowl. I poured a about 1-2 tablespoons of lemon juice and about 7 shakes of salt (I like my salt!).

I then stirred everything around with a fork, kind of mushing up the avocado so it would sort of mix with the lemon juice to make a creamy dressing. Then I added the sprouts in small bunches and stirred again until everything was covered in the avocado and lemon juice mixture.

It’s good. Really good. especially if you like lemon. You could probably switch out the lemon juice for balsamic vinegar if you wanted.

Besides all of the vitamins and nutrients you get from the greens, there’s a good amount of fiber (10 grams per 1 cup) and healthy fat in the avocado. The lemon juice, avocado, sprouts and cucumber are also very alkalizing (see chart below). This dish is also low-carb, and you don’t even need lettuce.

Unlike many other salads, I find this one very filling due to the avocado. You can’t be afraid of fat, though. 1 cup of avocado delivers about 21 grams of fat. It is also high in Vitamin C, Vitamin B-6 and Potassium.

All in all, this turns out to be about a 300 calorie salad. The caloric content of the cucumber, sprouts, lemon juice and salt really don’t amount to much – it’s really the avocado that we’re looking at here. That’s why I’m not afraid to use an entire avocado.
